This 30 Minute Low-Carb Bacon and Leek Frittata has become one of my favorite dinners because it is so easy to prepare. It’s low-carb with 9g of net carbs per serve and brilliant re-heated for lunch the next day. Frittatas are such a versatile dish (read forgiving!) which means you can change up the ingredients based on what you have. Add a little more bacon? Sure.
